A brand-new month is here, and October just seems to call for big pots of chili, warm cornbread, crisp evenings, and good food shared around the table.

So we're kicking off October with something special: Harvest Cowboy Beef & Sweet Potato Chili!

This hearty chili is packed with seasoned ground beef, sweet potatoes, beans, fire-roasted tomatoes, peppers, corn, and smoky spices. The sweet potatoes add just enough natural sweetness to balance the chili without making it overly sweet.

And we're serving it with homemade Maple-Cheddar Skillet Cornbread.

šŸŒ¶ļø Harvest Cowboy Beef & Sweet Potato Chili

Ingredients

  • 2 lbs ground beef

  • 1 tablespoon olive oil

  • 1 large sweet onion, diced

  • 1 green bell pepper, diced

  • 1 red bell pepper, diced

  • 1 jalapeƱo, seeded and finely diced, optional

  • 4 cloves garlic, minced

  • 2 medium sweet potatoes, peeled and cut into small cubes

  • 1½ cups sweet corn

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) black beans, drained and rinsed

  • 2 cans (14.5 oz each) fire-roasted diced tomatoes

  • 1 can (15 oz) tomato sauce

  • 2 cups beef broth

  • 2 tablespoons tomato paste

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon brown sugar, optional

šŸŒ¶ļø Cowboy Seasoning

  • 3 tablespoons chili powder

  • 2 teaspoons smoked paprika

  • 2 teaspoons ground cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano

  • ½ teaspoon black pepper

  • 1 teaspoon salt, or to taste

  • ¼–½ teaspoon cayenne, optional

šŸ”„ Let's Get Cooking!

1ļøāƒ£ Brown that beef!Heat a large Dutch oven over medium-high heat.

Add the ground beef and cook until browned, breaking it into hearty crumbles as it cooks. Drain excess grease if necessary and remove the beef temporarily.

2ļøāƒ£ Bring on those vegetables!Add olive oil, onion, red and green peppers, and jalapeƱo.

Cook for about 5–6 minutes, until they begin to soften.

Add the garlic and cook another 30 seconds.

3ļøāƒ£ Wake up those spices!Stir in the tomato paste and all of the Cowboy Seasoning.

Cook for about 1 minute.

That little extra step helps bring out the smoky flavor of those spices! šŸ”„

4ļøāƒ£ Build that chili!Return the beef to the Dutch oven.

Add the sweet potatoes, fire-roasted tomatoes, tomato sauce, beef broth, Worcestershire sauce, apple cider vinegar, and brown sugar if using.

Bring everything to a gentle simmer.

5ļøāƒ£ Let those flavors come together!Cover and simmer over low heat for about 25–30 minutes, stirring occasionally.

When the sweet potatoes are almost fork-tender, add the kidney beans, black beans, and corn.

6ļøāƒ£ Finish it low and slow.Simmer uncovered another 15–20 minutes, until the chili is thick and the sweet potatoes are tender.

Taste and adjust your seasoning.

Want more smoke? šŸ”„ Add another pinch of smoked paprika.

Want a little more sweetness? šŸ Add a teaspoon of maple syrup.

Ingredients

  • 1 cup yellow cornmeal

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 2 large eggs

  • 1 cup buttermilk

  • ¼ cup melted butter

  • 3 tablespoons pure maple syrup

  • 1 cup shredded sharp cheddar

  • 1 tablespoon butter for the skillet

  • 4 tablespoons softened butter

  • 1½ tablespoons pure maple syrup

  • Pinch of salt

Preheat the oven to 400°F and place a 10-inch cast-iron skillet inside while the oven heats.

Combine the cornmeal, flour, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, buttermilk, melted butter, and maple syrup.

Gently combine the wet and dry ingredients, then fold in the cheddar.

Carefully remove the hot skillet, add a tablespoon of butter, and swirl it around.

Pour in the batter and bake for approximately 20–25 minutes, until golden.

Mix the softened butter with maple syrup and salt, then spread a little over a warm slice.
