Good morning, ! 🤠We’re wrapping up the month with a hearty, colorful, and flavor-packed meal that’s just as beautiful as it is delicious!

These stuffed peppers are filled with savory beef, seasoned rice, and melted cheese—a perfect chuckwagon-style dish with a homestyle touch.

🫑🥩🍚 Ingredients

  • 4 large bell peppers (tops cut off, seeds removed)

  • 1 lb ground beef

  • 1 tablespoon oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup cooked rice

  • 1 can (14 oz) diced tomatoes

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • 1 teaspoon Italian seasoning

  • 1 cup shredded cheese

🔥 Chuckwagon Cooking Instructions

1️⃣ Preheat oven or Dutch oven to 375°F.

2️⃣ Heat oil in a skillet and cook ground beef until browned.

3️⃣ Add onion and garlic; cook until soft and fragrant.

4️⃣ Stir in cooked rice, diced tomatoes, and seasonings.

5️⃣ Stuff mixture into prepared bell peppers.

6️⃣ Place peppers in a baking dish or Dutch oven.

7️⃣ Cover and bake for 25–30 minutes until peppers are tender.

8️⃣ Remove cover, add cheese on top, and bake another 5 minutes until melted.

🥄 Chuckwagon Serving Tip

Serve hot with:

  • Warm bread 🧈

  • Side salad

  • Or enjoy as a full meal on its own 🤠

Campfire Tip

Use a Dutch oven with coals on top and bottom to cook evenly—this helps soften the peppers perfectly while melting the cheese just right.
