Good morning, folks! 🤠Today’s chuckwagon favorite is a warm, hearty, down-home comfort meal packed with tender chicken, creamy rice, and rich savory flavor.

This one-pan skillet meal is perfect for busy evenings while still feeling like a homemade Sunday supper around the chuckwagon fire.


🍗🍚 Ingredients

  • 1½ lbs chicken thighs or breasts

  • 1 tablespoon oil or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup uncooked rice

  • 2 cups chicken broth

  • 1 can cream of chicken soup

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • ½ teaspoon thyme

  • Optional: fresh parsley for garnish

🔥 Chuckwagon Cooking Instructions

1️⃣ Heat a large cast iron skillet over medium heat.

2️⃣ Add oil and brown chicken on both sides until golden. Remove and set aside.

3️⃣ In the same skillet, sauté onion and garlic until soft and fragrant.

4️⃣ Stir in uncooked rice, chicken broth, cream of chicken soup, and seasonings.

5️⃣ Mix well and return chicken to the skillet.

6️⃣ Cover and simmer on low for 20–25 minutes until rice is tender and chicken is fully cooked.

7️⃣ Let rest a few minutes before serving.
