🔥 Chuckwagon Brunswick Stew

🥩 Ingredients

  • 1 lb pulled pork (or shredded rotisserie chicken)

  • ½ lb smoked sausage, sliced

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 3 medium potatoes, peeled and diced

  • 2 cups frozen corn

  • 1 cup lima beans (or butter beans)

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (8 oz) tomato sauce

  • 1 cup BBQ sauce (sweet and smoky style)

  • 4 cups chicken or beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt (to taste)

  • ½ tsp black pepper

  • ½ tsp smoked paprika

  • ½ tsp chili powder

  • 1 tbsp brown sugar (optional for balance)

🍳 Instructions

  1. Sauté the Base:In a large cast-iron pot or Dutch oven, cook the onion and garlic until fragrant.

  2. Add the Meats:Stir in the pulled pork (or chicken) and sausage. Sear lightly to blend the smoky flavors.

  3. Toss in the Veggies:Add potatoes, corn, and lima beans. Stir well.

  4. Add Liquids:Pour in tomatoes, tomato sauce, BBQ sauce, and broth. Add Worcestershire and all seasonings.

  5. Simmer Slow & Steady:Bring to a gentle boil, then reduce heat. Simmer uncovered for 1 hour, stirring occasionally, until the stew thickens and flavors meld.

  6. Taste & Serve:Adjust seasoning as needed. Serve hot with cornbread, biscuits, or a side of coleslaw.

Traditionally, this stew simmered all day over a campfire — the longer it cooks, the richer the flavor. It’s even better the next day!
