🔥 Chuckwagon Brunswick Stew

🥩 Ingredients
1 lb pulled pork (or shredded rotisserie chicken)
½ lb smoked sausage, sliced
1 medium onion, chopped
2 cloves garlic, minced
3 medium potatoes, peeled and diced
2 cups frozen corn
1 cup lima beans (or butter beans)
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup BBQ sauce (sweet and smoky style)
4 cups chicken or beef broth
1 tbsp Worcestershire sauce
1 tsp salt (to taste)
½ tsp black pepper
½ tsp smoked paprika
½ tsp chili powder
1 tbsp brown sugar (optional for balance)
🍳 Instructions
Sauté the Base:In a large cast-iron pot or Dutch oven, cook the onion and garlic until fragrant.
Add the Meats:Stir in the pulled pork (or chicken) and sausage. Sear lightly to blend the smoky flavors.
Toss in the Veggies:Add potatoes, corn, and lima beans. Stir well.
Add Liquids:Pour in tomatoes, tomato sauce, BBQ sauce, and broth. Add Worcestershire and all seasonings.
Simmer Slow & Steady:Bring to a gentle boil, then reduce heat. Simmer uncovered for 1 hour, stirring occasionally, until the stew thickens and flavors meld.
Taste & Serve:Adjust seasoning as needed. Serve hot with cornbread, biscuits, or a side of coleslaw.
