🌾 Chuckwagon Hearty Beef & Cabbage Stew
Serves: 6–8Prep Time: 15 minutes Cook Time: 45 minutes
A classic trail-style stew—simple ingredients, big flavor, and that old-fashioned comfort you’d expect from a chuckwagon meal. This one is budget-friendly, filling, and delicious!
🥩 Ingredients
1 lb ground beef or diced stew beef
1 tbsp bacon grease or olive oil
1 small onion, chopped
2 carrots, chopped
2 celery stalks, sliced
3 medium potatoes, diced
3 cups chopped green cabbage
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 tsp garlic powder
1 tsp smoked paprika
1 tsp thyme
½ tsp salt (adjust to taste)
½ tsp black pepper
Optional: splash of Worcestershire sauce for depth
🍳 Instructions
1. Brown the Beef
Heat bacon grease in a Dutch oven. Add beef and brown well. Drain if needed.
2. Add Veggies
Stir in onion, carrots, and celery. Cook for 3–4 minutes.
3. Build the Stew
Add potatoes, cabbage, tomatoes, broth, and all seasonings. Stir well.
4. Simmer
Bring to a low boil, then reduce heat. Simmer 30–35 minutes, stirring occasionally, until cabbage is tender and potatoes soften.
5. Serve
Ladle into bowls and enjoy with cornbread, skillet biscuits, or chowder crackers.

Cabbage was a trail favorite because it kept well—add extra to stretch the stew and feed more hungry cowboys!
