🥔 Old-Fashioned Beef, Onion & Potato Camp Skillet
A humble, hearty winter classic—simple ingredients, deep flavor, and true cold-day comfort.

This is the kind of meal a chuckwagon cook made when supplies were simple but appetites were big. Rich beef, tender potatoes, and sweet onions all simmered together until cozy and satisfying.
🥩 Ingredients
1 lb ground beef or chopped stew beef
2 tbsp butter or bacon grease
1 large onion, sliced
4 medium potatoes, diced
2 cloves garlic, minced
3 cups beef broth
1 tsp thyme
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt (to taste)
Optional: splash of Worcestershire or a pinch of chili flakes
🍳 Instructions
Brown the BeefIn a Dutch oven or deep skillet, heat butter/bacon grease. Brown the beef; drain excess fat if needed.
Add Onions & GarlicStir in sliced onion and garlic. Cook until onions soften and turn fragrant.
Add Potatoes & BrothAdd diced potatoes, broth, thyme, paprika, salt, and pepper. Stir well.
SimmerBring to a gentle boil, then reduce heat. Cover and simmer 25–30 minutes, until potatoes are tender and the broth thickens slightly.
ServeSpoon into bowls and serve with cornbread, biscuits, or a slice of skillet bread.

For extra richness, mash a few potatoes right in the pot during the last 5 minutes—old camp-cook thickening at its best.
