A humble, comforting winter meal—rich gravy, tender chicken, and soft biscuit pieces simmered together.

This is the kind of meal chuckwagon cooks made when folks needed something filling, gentle, and satisfying after days of cold weather.

  • 2 tbsp butter or bacon grease

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 tbsp flour

  • 4 cups chicken broth

  • 2 cups cooked shredded chicken

  • 1 tsp poultry seasoning or thyme

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

  • 1 cup milk or half-and-half

For the Biscuits

  • 2 cups biscuit dough, cut into small pieces(store-bought or homemade)

  1. Build the Gravy BaseIn a Dutch oven, melt butter over medium heat. Add onion and garlic; cook until soft. Sprinkle in flour and stir constantly for 1 minute.

  2. Add Broth SlowlyGradually whisk in chicken broth, stirring until smooth and thickened.

  3. Add Chicken & SeasoningStir in shredded chicken, poultry seasoning, salt, and pepper. Reduce heat to a gentle simmer.
