🔥 Chuckwagon Ranch Bean Soup

🫘 Ingredients

  • 1 lb smoked sausage or kielbasa, sliced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced (any color)

  • 1 can (15 oz) ranch-style beans (or pinto beans), undrained

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) diced tomatoes with green chilies

  • 1 cup frozen or canned corn

  • 4 cups beef or chicken broth

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • 1 tsp salt (to taste)

  • Optional: 1 small jalapeño, finely chopped for heat

🍳 Instructions

  1. Brown the Meat:In a large pot or Dutch oven, cook the sliced sausage over medium heat until browned. Remove and set aside.

  2. Sauté the Vegetables:In the same pot, add onion, garlic, and bell pepper. Cook until softened and fragrant.

  3. Add the Rest:Stir in beans, tomatoes, corn, broth, and seasonings. Return sausage to the pot.

  4. Simmer & Thicken:Bring to a gentle boil, reduce heat, and simmer for 45 minutes to let flavors meld.

  5. Taste & Adjust:Add more salt or spice if needed.

🍞 Serving Suggestions

  • Garnish with shredded cheese, green onions, or crushed tortilla chips.
