🔥 Chuckwagon Ranch Bean Soup
Serves: 6–8Prep Time: 15 minutesCook Time: 1 hour
🫘 Ingredients
1 lb smoked sausage or kielbasa, sliced
1 small onion, diced
2 cloves garlic, minced
1 bell pepper, diced (any color)
1 can (15 oz) ranch-style beans (or pinto beans), undrained
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes with green chilies
1 cup frozen or canned corn
4 cups beef or chicken broth
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp black pepper
1 tsp salt (to taste)
Optional: 1 small jalapeño, finely chopped for heat
🍳 Instructions
Brown the Meat:In a large pot or Dutch oven, cook the sliced sausage over medium heat until browned. Remove and set aside.
Sauté the Vegetables:In the same pot, add onion, garlic, and bell pepper. Cook until softened and fragrant.
Add the Rest:Stir in beans, tomatoes, corn, broth, and seasonings. Return sausage to the pot.
Simmer & Thicken:Bring to a gentle boil, reduce heat, and simmer for 45 minutes to let flavors meld.
Taste & Adjust:Add more salt or spice if needed.
🍞 Serving Suggestions
Garnish with shredded cheese, green onions, or crushed tortilla chips.
Serve with cornbread or a skillet biscuit.
