š¾ Chuckwagon Smoky Sausage & Potato Skillet Stew
Serves:Ā 6ā8Prep Time:Ā 10 minutesCook Time:Ā 35 minutes
A quick, hearty stew with big smoky flavor ā the kind ranch cooks made when the herd was moving fast and supper needed to be on the table quick!
š Ingredients
1 lb smoked sausage, sliced
1 tbsp bacon grease or butter
1 medium onion, chopped
3 medium potatoes, diced
2 carrots, chopped
1 cup corn (fresh, canned, or frozen)
1 can (14.5 oz) diced tomatoes
3 cups chicken or beef broth
1 tsp smoked paprika
½ tsp garlic powder
½ tsp black pepper
½ tsp salt (adjust to taste)
Optional: pinch of cayenne for ātrail heatā
š³ Instructions
1. Brown the Sausage
Heat a Dutch oven or skillet pot over medium heat. Add sausage and let it brown slightly for deeper flavor.
2. Add Veggies
Stir in onion, potatoes, and carrots. Cook 5 minutes to soften.
3. Build the Broth
Add corn, tomatoes, broth, and seasonings. Stir well.
4. Simmer
Bring to a boil, then reduce the heat. Simmer uncovered 20ā25 minutes, until potatoes are tender and stew thickens.
5. Serve
Ladle into bowls and enjoy with cornbread, biscuits, or your favorite chuckwagon bread.

Cowboys often tossed in leftover biscuits to thicken stew ā you can add a crumbled biscuit in the last 10 minutes for an authentic, rustic texture!
