A quick, hearty stew with big smoky flavor — the kind ranch cooks made when the herd was moving fast and supper needed to be on the table quick!

šŸ„ Ingredients

  • 1 lb smoked sausage, sliced

  • 1 tbsp bacon grease or butter

  • 1 medium onion, chopped

  • 3 medium potatoes, diced

  • 2 carrots, chopped

  • 1 cup corn (fresh, canned, or frozen)

  • 1 can (14.5 oz) diced tomatoes

  • 3 cups chicken or beef broth

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • Optional: pinch of cayenne for ā€œtrail heatā€

šŸ³ Instructions

1. Brown the Sausage

Heat a Dutch oven or skillet pot over medium heat. Add sausage and let it brown slightly for deeper flavor.

2. Add Veggies

Stir in onion, potatoes, and carrots. Cook 5 minutes to soften.

3. Build the Broth

Add corn, tomatoes, broth, and seasonings. Stir well.

4. Simmer

Bring to a boil, then reduce the heat. Simmer uncovered 20–25 minutes, until potatoes are tender and stew thickens.

5. Serve

Ladle into bowls and enjoy with cornbread, biscuits, or your favorite chuckwagon bread.
