š¾ Cozy Campfire Chicken & Biscuit Stew
A hug-in-a-bowl kind of meal ā perfect for cold weather, quiet evenings, and family gathered close.
Serves:Ā 6ā8Prep Time:Ā 15 minutesCook Time:Ā 40 minutes
This stew is rich, creamy, and hearty, with tender chicken, vegetables, and soft biscuit dumplings that soak up all that goodness.
š Ingredients
For the Stew
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
3 medium potatoes, diced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded chicken
4 cups chicken broth
1 cup milk or half-and-half
1 tsp thyme
½ tsp black pepper
½ tsp salt (to taste)
For the Biscuit Dumplings
1 cup biscuit mix (or homemade biscuit dough)
½ cup milk
š³ Instructions
Build the Cozy BaseIn a Dutch oven, melt butter over medium heat. Add onion, garlic, carrots, celery, and potatoes. Cook 5ā6 minutes until fragrant and slightly softened.
Add Chicken & BrothStir in shredded chicken, chicken broth, thyme, salt, and pepper. Bring to a gentle simmer.
Make It CreamyReduce heat and stir in milk or half-and-half. Let it warm through (donāt boil).
Add Biscuit DumplingsMix biscuit mix and milk until thick. Drop spoonfuls gently on top of the simmering stew.Do not stir.
Cover & CookCover and simmer 12ā15 minutes, until dumplings are fluffy and cooked through.
Serve HotLadle into bowls, making sure everyone gets tender veggies andĀ a biscuit dumpling.
