This stew is rich, creamy, and hearty, with tender chicken, vegetables, and soft biscuit dumplings that soak up all that goodness.

For the Stew

  • 2 tbsp butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • 4 cups chicken broth

  • 1 cup milk or half-and-half

  • 1 tsp thyme

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

For the Biscuit Dumplings

  • 1 cup biscuit mix (or homemade biscuit dough)

  • ½ cup milk

  1. Build the Cozy BaseIn a Dutch oven, melt butter over medium heat. Add onion, garlic, carrots, celery, and potatoes. Cook 5–6 minutes until fragrant and slightly softened.

  2. Add Chicken & BrothStir in shredded chicken, chicken broth, thyme, salt, and pepper. Bring to a gentle simmer.

  3. Make It CreamyReduce heat and stir in milk or half-and-half. Let it warm through (don’t boil).

  4. Add Biscuit DumplingsMix biscuit mix and milk until thick. Drop spoonfuls gently on top of the simmering stew.Do not stir.

  5. Cover & CookCover and simmer 12–15 minutes, until dumplings are fluffy and cooked through.

  6. Serve HotLadle into bowls, making sure everyone gets tender veggies andĀ a biscuit dumpling.
