Autumn Turkey & Rice SoupĀ šŸ¦ƒšŸ²

Ingredients:

  • 2 tbsp olive oil or butter

  • 1 lb ground turkey (or leftover roasted turkey, shredded)

  • 1 medium onion, diced

  • 2 carrots, peeled & sliced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 cup long-grain rice (white or brown)

  • 6 cups chicken or turkey broth

  • 1 cup diced butternut squash (or sweet potato)

  • 1 tsp thyme

  • ½ tsp sage

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

  • Garnish: fresh parsley or a squeeze of lemon juice

Instructions:

  1. In a large pot, heat oil. Add ground turkey and cook until browned. Remove and set aside.

  2. Add onion, carrots, celery, and garlic to the pot. SautĆ© 5–7 minutes until softened.

  3. Stir in rice, broth, squash, thyme, sage, paprika, salt, and pepper. Bring to a boil.

  4. Reduce heat and simmer 25–30 minutes until rice and squash are tender.

  5. Return turkey to the pot. Simmer 5 more minutes.

  6. Taste and adjust seasoning. Garnish with parsley or a splash of lemon juice for brightness.

šŸ„– Serve hot with crusty bread or cornbread for a wholesome fall meal.
