Autumn Turkey & Rice SoupĀ š¦š²
Ingredients:
2 tbsp olive oil or butter
1 lb ground turkey (or leftover roasted turkey, shredded)
1 medium onion, diced
2 carrots, peeled & sliced
2 celery stalks, diced
3 cloves garlic, minced
1 cup long-grain rice (white or brown)
6 cups chicken or turkey broth
1 cup diced butternut squash (or sweet potato)
1 tsp thyme
½ tsp sage
½ tsp smoked paprika
Salt & black pepper, to taste
Garnish: fresh parsley or a squeeze of lemon juice
Instructions:
In a large pot, heat oil. Add ground turkey and cook until browned. Remove and set aside.
Add onion, carrots, celery, and garlic to the pot. SautĆ© 5ā7 minutes until softened.
Stir in rice, broth, squash, thyme, sage, paprika, salt, and pepper. Bring to a boil.
Reduce heat and simmer 25ā30 minutes until rice and squash are tender.
Return turkey to the pot. Simmer 5 more minutes.
Taste and adjust seasoning. Garnish with parsley or a splash of lemon juice for brightness.
š„ Serve hot with crusty bread or cornbread for a wholesome fall meal.
