Daily Chuckwagon Recipe

Cheesy Broccoli & Potato Soup

Ingredients:

  • 2 tbsp butter

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, peeled & cubed

  • 3 cups chicken or vegetable broth

  • 3 cups broccoli florets (fresh or frozen)

  • 1 cup milk or half-and-half

  • 2 cups shredded cheddar cheese

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

  • Garnish: extra cheddar, crispy bacon crumbles, or chopped chives

Instructions:

  1. In a large pot, melt butter. Add onion and garlic, sauté 5 minutes until softened.

  2. Stir in potatoes, broth, salt, pepper, and paprika. Bring to a boil, then simmer 15 minutes until potatoes are tender.

  3. Add broccoli and cook another 8–10 minutes until tender.

  4. Use an immersion blender to puree part of the soup for a creamy texture, leaving some chunks for heartiness.

  5. Stir in milk and cheddar cheese until melted and smooth.

  6. Taste and adjust seasoning.

  7. Serve hot, garnished with extra cheese, bacon, or chives.

Best enjoyed with crusty bread or a warm biscuit for a true chuckwagon comfort meal.
