Crockpot BBQ Ranch Chicken & PotatoesĀ šš„
Ingredients:
4 boneless, skinless chicken breasts (or thighs)
1 ½ lbs baby potatoes, halved
3 carrots, peeled & cut into chunks
1 small onion, sliced
1 cup BBQ sauce (your favorite brand)
½ cup chicken broth
1 packet ranch seasoning mix (or 3 tbsp homemade ranch blend)
1 tsp smoked paprika
½ tsp garlic powder
Salt & black pepper, to taste
Garnish: chopped parsley or green onions
Instructions:
Place potatoes, carrots, and onions in the bottom of the crockpot.
Lay chicken on top of the vegetables.
In a small bowl, mix BBQ sauce, chicken broth, ranch mix, paprika, garlic powder, salt, and pepper.
Pour the mixture evenly over everything in the crockpot.
Cover and cook:
Low:Ā 6ā7 hours
High:Ā 3ā4 hours
Stir gently before serving. Garnish with parsley or green onions.
