Crockpot BBQ Ranch Chicken & PotatoesĀ šŸ—šŸ„”

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 ½ lbs baby potatoes, halved

  • 3 carrots, peeled & cut into chunks

  • 1 small onion, sliced

  • 1 cup BBQ sauce (your favorite brand)

  • ½ cup chicken broth

  • 1 packet ranch seasoning mix (or 3 tbsp homemade ranch blend)

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • Salt & black pepper, to taste

  • Garnish: chopped parsley or green onions

Instructions:

  1. Place potatoes, carrots, and onions in the bottom of the crockpot.

  2. Lay chicken on top of the vegetables.

  3. In a small bowl, mix BBQ sauce, chicken broth, ranch mix, paprika, garlic powder, salt, and pepper.

  4. Pour the mixture evenly over everything in the crockpot.

  5. Cover and cook:

    • Low:Ā 6–7 hours

    • High:Ā 3–4 hours

  6. Stir gently before serving. Garnish with parsley or green onions.
