Crockpot Beef & Vegetable StewĀ š„š„š„©
Ingredients:
1 ½ lbs beef stew meat, cubed
4 medium potatoes, peeled & cubed
3 carrots, sliced
2 celery stalks, chopped
1 small onion, diced
3 cloves garlic, minced
4 cups beef broth
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp thyme
1 tsp rosemary
½ tsp paprika
Salt & black pepper, to taste
2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Garnish: fresh parsley
Instructions:
Add beef, potatoes, carrots, celery, onion, and garlic to the crockpot.
Stir in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
Cover and cook on Low for 7ā8 hoursĀ or High for 4ā5 hours, until beef and vegetables are tender.
If you prefer a thicker stew, mix cornstarch and water together and stir into the crockpot during the last 30 minutes of cooking.
Taste and adjust seasoning. Garnish with fresh parsley before serving.
