Hobo ChiliĀ š¾š„
Ingredients:
1 lb ground beef (or venison for a wilder flavor)
1 tbsp olive oil or bacon drippings
1 small onion, diced
3 cloves garlic, minced
1 green bell pepper, diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 tbsp chili powder
1 tsp smoked paprika
1 tsp cumin
½ tsp black pepper
Salt, to taste
Optional: a dash of hot sauce or a sprinkle of brown sugar for sweetness
Garnish: shredded cheddar, sour cream, green onions, or crushed crackers
Instructions:
In a large Dutch oven or cast iron pot, heat olive oil over medium heat.
Add ground beef, onion, and garlic. Cook until browned.
Stir in bell pepper, beans, corn, diced tomatoes, tomato sauce, and all seasonings.
Bring to a simmer, then reduce heat and cook 30ā40 minutes, stirring occasionally.
Adjust seasoning to taste.
Serve hot with your favorite toppings and cornbread or biscuits on the side.
