One-Pot Cheesy Beef & Rice SkilletĀ šŸ§€šŸ„©

Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 tbsp olive oil or butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced

  • 1 cup long-grain rice (uncooked)

  • 2 cups beef broth

  • 1 can (14.5 oz) diced tomatoes

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • Salt & pepper, to taste

  • 1 ½ cups shredded cheddar cheese

  • Garnish: chopped parsley or green onions

Instructions:

  1. In a large deep skillet or Dutch oven, heat oil and brown the ground beef with onion and garlic until no longer pink. Drain excess grease if needed.

  2. Add bell pepper, rice, broth, diced tomatoes, and seasonings. Stir to combine.

  3. Bring to a boil, then reduce heat, cover, and simmer 20–25 minutes, stirring occasionally, until rice is tender and liquid is absorbed.

  4. Stir in 1 cup of cheese until melted and creamy.

  5. Sprinkle remaining cheese on top, cover, and let it melt for 2–3 minutes.

  6. Garnish with parsley or green onions before serving.
