One-Pot Cheesy Chicken & Broccoli RiceĀ š§š„¦š
Ingredients:
2 tbsp butter or olive oil
1 lb boneless, skinless chicken breasts (cut into cubes)
1 small onion, diced
2 cloves garlic, minced
1 cup long-grain rice (uncooked)
2 ½ cups chicken broth
1 cup milk (or half-and-half for extra creaminess)
2 cups fresh or frozen broccoli florets
1 tsp paprika
½ tsp thyme
Salt & black pepper, to taste
1 ½ cups shredded cheddar cheese
Garnish: chopped parsley or a sprinkle of extra cheese
Instructions:
In a large deep skillet or Dutch oven, melt butter over medium heat. Add chicken and cook until golden brown. Remove and set aside.
Add onion and garlic; sautĆ© for 3ā4 minutes until fragrant.
Stir in rice, broth, milk, paprika, thyme, salt, and pepper. Bring to a boil.
Reduce heat, cover, and simmer 15 minutes.
Add broccoli and cooked chicken. Cover again and cook another 5ā7 minutes, until rice and broccoli are tender.
Stir in cheese until melted and creamy.
Garnish with parsley or more cheese before serving.
