One-Pot Cheesy Taco PastaĀ š®š§
Ingredients:
1 lb ground beef (or turkey)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade mix)
1 can (10 oz) diced tomatoes with green chilies
3 cups beef broth
8 oz pasta shells or rotini (uncooked)
1 cup corn (optional)
1 cup black beans, rinsed & drained (optional)
1 cup shredded cheddar cheese
½ cup sour cream
Garnish: diced tomatoes, cilantro, or crushed tortilla chips
Instructions:
In a large deep skillet or Dutch oven, heat olive oil and brown the ground beef with onion and garlic. Drain any excess fat.
Stir in taco seasoning, diced tomatoes, and beef broth. Bring to a boil.
Add pasta and reduce heat to medium. Cover and simmer 12ā15 minutes, stirring occasionally, until pasta is tender and liquid has reduced.
Stir in corn, beans, cheese, and sour cream until melted and creamy.
Taste and adjust seasoning.
Serve hot, topped with your favorite garnishes like cilantro, tomatoes, or crushed chips.
