One-Pot Creamy Ham & Pea PastaĀ šŸ–šŸ§€

Ingredients:

  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups diced cooked ham

  • 3 cups chicken broth

  • 1 ½ cups milk (or half-and-half for richness)

  • 12 oz pasta (penne, rotini, or shells)

  • 1 cup frozen peas

  • ½ cup shredded parmesan cheese

  • 1 cup shredded cheddar (optional for extra creaminess)

  • Salt & black pepper, to taste

  • Garnish: fresh parsley or a sprinkle of extra cheese

Instructions:

  1. In a large deep skillet or Dutch oven, melt butter over medium heat. Add onion and garlic; cook 3–5 minutes until softened.

  2. Stir in diced ham and cook another 2 minutes.

  3. Add chicken broth, milk, and pasta. Bring to a boil, then reduce heat to medium-low. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender.

  4. Stir in peas, parmesan, and cheddar. Continue cooking 2–3 minutes until cheese melts and sauce thickens.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with parsley or extra cheese.
