One-Pot Creamy Sausage & Potato SoupĀ š„š
Ingredients:
1 lb smoked sausage or kielbasa, sliced into rounds
1 tbsp olive oil or butter
1 small onion, diced
3 cloves garlic, minced
4 medium potatoes, peeled & diced
4 cups chicken broth
1 cup milk or half-and-half
½ cup heavy cream (optional, for extra richness)
1 tsp thyme
½ tsp smoked paprika
Salt & black pepper, to taste
2 cups chopped kale or spinach (optional for color)
1 cup shredded cheddar cheese (optional)
Garnish: crispy bacon bits or chopped parsley
Instructions:
In a large pot, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
Add onion and garlic to the pot. SautĆ© for 3ā4 minutes until fragrant.
Stir in potatoes, broth, thyme, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer 20ā25 minutes until potatoes are tender.
Stir in milk and cream, then add sausage back to the pot. Simmer 5ā10 minutes longer.
If using kale or spinach, stir it in at the end and cook until wilted.
For a cheesy version, stir in shredded cheddar before serving.
Garnish with bacon or parsley and serve hot with crusty bread.
