One-Pot Smoked Sausage & Potato SkilletĀ šŸ„”šŸŒ­

Ingredients:

  • 1 lb smoked sausage or kielbasa, sliced into rounds

  • 2 tbsp olive oil or butter

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 4 medium potatoes, diced (Yukon gold or red work best)

  • 1 bell pepper, diced (any color)

  • 2 cups baby spinach (optional, for color and nutrition)

  • 1 tsp smoked paprika

  • ½ tsp thyme

  • ½ tsp black pepper

  • Salt, to taste

  • ½ cup shredded cheddar or Colby Jack cheese (optional)

  • Garnish: chopped parsley or green onions

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.

  2. In the same skillet, add onion, garlic, and potatoes. Cook 10–12 minutes, stirring occasionally, until potatoes start to soften.

  3. Add bell pepper, paprika, thyme, salt, and pepper. Stir well, then add ¼ cup water. Cover and cook another 8–10 minutes, until potatoes are tender.

  4. Stir sausage back into the skillet. Add spinach (if using) and cook 2–3 minutes until wilted.

  5. Top with cheese, cover for 1 minute to melt, then garnish with parsley or green onions.
