One-Pot Smothered Pork Chops with Potatoes & OnionsĀ šŸ„”šŸ–šŸ§…

Ingredients:

  • 4 bone-in or boneless pork chops

  • 2 tbsp olive oil or butter

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 4 medium potatoes, peeled & sliced into ¼-inch rounds

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1 cup milk

  • 1 tsp paprika

  • ½ tsp thyme

  • Salt & black pepper, to taste

  • Garnish: chopped parsley

Instructions:

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.

  2. Season pork chops with salt, pepper, and paprika, then brown them 3–4 minutes per side. Remove and set aside.

  3. Add onions and garlic to the pan; sautƩ until softened.

  4. Layer sliced potatoes on top of the onions, then place pork chops back in the pan.

  5. In a bowl, whisk together soup, milk, thyme, and a pinch of pepper. Pour evenly over the top.

  6. Cover and simmer on low for 35–40 minutes, until potatoes are tender and sauce is thickened.

  7. Garnish with parsley and serve hot with green beans or cornbread.
