🌾 Daily Chuckwagon RecipeCowboy Steak & Potato Stew 🥩🥔


Ingredients:

  • 2 lbs beef chuck or stew meat, cut into cubes

  • 2 tbsp olive oil or bacon drippings

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 3 carrots, peeled & sliced

  • 3 medium potatoes, cubed

  • 2 stalks celery, diced

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups beef broth

  • ½ cup red wine (optional, for depth)

  • 2 tbsp Worcestershire sauce

  • 2 tsp smoked paprika

  • 1 tsp thyme

  • 2 bay leaves

  • Salt & black pepper, to taste

  • Garnish: chopped parsley or fresh thyme

Instructions:

  1. In a large Dutch oven, heat oil. Brown beef cubes on all sides, then remove and set aside.

  2. Add onion, garlic, carrots, and celery. Sauté 5–7 minutes until softened.

  3. Stir in potatoes, tomatoes, beef broth, wine, Worcestershire, paprika, thyme, bay leaves, salt, and pepper. Return beef to the pot.

  4. Bring to a boil, then reduce heat. Cover and simmer 1½–2 hours until beef is fork-tender.

  5. Remove bay leaves, adjust seasoning, and garnish with parsley before serving.

🥖 Serve with crusty bread for a cowboy-style chuckwagon feast!
