Creamy Ham, Potato & Corn Soup 🥔🥓🌽

Ingredients:

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 cups diced potatoes (Yukon Gold or Russet)

  • 2 cups diced cooked ham

  • 3 cups chicken broth

  • 1 ½ cups corn (fresh, frozen, or canned)

  • 1 cup milk

  • ½ cup heavy cream

  • ½ tsp thyme

  • ½ tsp black pepper

  • Salt, to taste

  • ½ cup shredded cheddar cheese (optional, for extra richness)

  • Garnish: crispy bacon bits and chopped parsley

Instructions:

  1. In a large soup pot, heat butter and olive oil over medium heat. Add onion and garlic; cook until fragrant, about 5 minutes.

  2. Add potatoes, ham, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer 20–25 minutes, until potatoes are tender.

  3. Stir in corn, milk, and cream. Simmer gently for 5–10 minutes (do not boil).

  4. If you like it thicker, mash a few potatoes in the pot or use an immersion blender for a creamy texture.

  5. Stir in cheese until melted.

  6. Serve hot, topped with bacon bits and parsley.
