Harvest Chicken & Sweet Potato SkilletĀ šš š
Ingredients:
2 tbsp olive oil or butter
1 lb boneless, skinless chicken breasts (cut into bite-size pieces)
1 large sweet potato, peeled & cubed
1 apple (Honeycrisp or Gala), peeled & diced
1 small onion, diced
3 cloves garlic, minced
½ cup apple cider or chicken broth
1 tsp thyme
½ tsp cinnamon
½ tsp smoked paprika
Salt & black pepper, to taste
¼ cup dried cranberries
¼ cup chopped pecans (optional, for crunch)
Garnish: fresh parsley
Instructions:
In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden brown. Remove and set aside.
In the same skillet, add sweet potatoes and cook 6ā8 minutes until starting to soften.
Add onion, garlic, and apple; cook 3ā4 minutes more.
Stir in apple cider (or broth), thyme, cinnamon, paprika, salt, and pepper.
Return chicken to the skillet and simmer 5ā7 minutes until sauce thickens and potatoes are tender.
Stir in dried cranberries and pecans.
Garnish with parsley before serving.
