Hearty Cabbage & Sausage SoupĀ š„¬š„£
Ingredients:
1 lb smoked sausage or kielbasa, sliced into rounds
1 tbsp olive oil or butter
1 medium onion, diced
3 carrots, peeled & sliced
2 celery stalks, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups water
1 small head of green cabbage, chopped
2 medium potatoes, cubed
1 can (14.5 oz) diced tomatoes
1 tsp smoked paprika
½ tsp thyme
Salt & black pepper, to taste
Garnish: fresh parsley
Instructions:
Heat oil in a large pot. Add sausage slices and cook until browned, then remove and set aside.
Add onion, carrots, celery, and garlic to the pot. Cook 5ā7 minutes until softened.
Stir in broth, water, cabbage, potatoes, tomatoes, paprika, thyme, salt, and pepper. Bring to a boil.
Reduce heat and simmer 30 minutes, until potatoes and cabbage are tender.
Return sausage to the pot and simmer 5 more minutes.
Serve hot, garnished with parsley ā perfect with cornbread or biscuits.
