One-Pot Chicken Alfredo with BroccoliĀ šŸ§„šŸ—šŸ„¦

Ingredients:

  • 2 tbsp butter

  • 1 lb boneless, skinless chicken breasts, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 2 cups milk (or half-and-half for extra creaminess)

  • 12 oz fettuccine or penne pasta

  • 2 cups broccoli florets (fresh or frozen)

  • 1 cup grated parmesan cheese

  • ½ cup shredded mozzarella (optional)

  • ½ tsp black pepper

  • ¼ tsp nutmeg (optional, adds warmth)

  • Salt, to taste

  • Garnish: chopped parsley

Instructions:

  1. In a large pot or deep skillet, melt butter over medium heat. Add chicken and cook until lightly browned.

  2. Add garlic and cook for 1 minute until fragrant.

  3. Stir in chicken broth, milk, pepper, nutmeg, and pasta. Bring to a boil, then reduce heat and simmer 12–15 minutes, stirring occasionally, until pasta is tender.

  4. Stir in broccoli during the last 5 minutes of cooking.

  5. Once pasta is cooked, remove from heat. Stir in parmesan and mozzarella until creamy.

  6. Taste and season with salt as needed.

  7. Garnish with parsley and serve warm.
