One-Pot Chicken Alfredo with BroccoliĀ š§šš„¦
Ingredients:
2 tbsp butter
1 lb boneless, skinless chicken breasts, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups milk (or half-and-half for extra creaminess)
12 oz fettuccine or penne pasta
2 cups broccoli florets (fresh or frozen)
1 cup grated parmesan cheese
½ cup shredded mozzarella (optional)
½ tsp black pepper
¼ tsp nutmeg (optional, adds warmth)
Salt, to taste
Garnish: chopped parsley
Instructions:
In a large pot or deep skillet, melt butter over medium heat. Add chicken and cook until lightly browned.
Add garlic and cook for 1 minute until fragrant.
Stir in chicken broth, milk, pepper, nutmeg, and pasta. Bring to a boil, then reduce heat and simmer 12ā15 minutes, stirring occasionally, until pasta is tender.
Stir in broccoli during the last 5 minutes of cooking.
Once pasta is cooked, remove from heat. Stir in parmesan and mozzarella until creamy.
Taste and season with salt as needed.
Garnish with parsley and serve warm.
