One-Pot Creamy Sausage & Spinach TortelliniĀ š§š§
Ingredients:
1 lb Italian sausage (mild or spicy), casings removed
1 tbsp olive oil or butter
1 small onion, diced
3 cloves garlic, minced
3 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream (or half-and-half)
1 (9 oz) package refrigerated cheese tortellini
2 cups fresh spinach (or kale)
1 tsp Italian seasoning
Salt & black pepper, to taste
½ cup shredded parmesan cheese
Garnish: extra parmesan and crushed red pepper flakes
Instructions:
In a large deep skillet or Dutch oven, heat olive oil and cook sausage until browned. Drain excess grease if needed.
Add onion and garlic; cook 3ā4 minutes until softened.
Stir in chicken broth, diced tomatoes, cream, Italian seasoning, salt, and pepper. Bring to a gentle boil.
Add tortellini and cook 7ā8 minutes until tender.
Stir in spinach and parmesan cheese, simmering 2ā3 more minutes until creamy and thickened.
Serve hot, garnished with extra parmesan and a sprinkle of red pepper flakes.
