One-Pot Creamy Turkey & Vegetable PastaĀ š¦š
Ingredients:
2 tbsp olive oil or butter
1 lb ground turkey (or leftover turkey, chopped)
1 small onion, diced
3 cloves garlic, minced
2 cups mixed vegetables (carrots, peas, and corn work great)
3 cups chicken broth
1 ½ cups milk (or half-and-half for creaminess)
12 oz pasta (penne, rotini, or shells)
1 tsp thyme
½ tsp paprika
Salt & black pepper, to taste
1 cup shredded cheddar or mozzarella cheese
Garnish: chopped parsley or a sprinkle of parmesan
Instructions:
Heat olive oil in a large pot over medium heat. Add turkey and cook until browned. Drain excess fat if needed.
Add onion and garlic, sautĆ© 3ā4 minutes until fragrant.
Stir in broth, milk, pasta, thyme, paprika, salt, and pepper. Bring to a gentle boil.
Reduce heat and simmer 12ā15 minutes, stirring occasionally, until pasta is tender and liquid has thickened.
Stir in mixed vegetables and cheese until melted and creamy.
Taste and adjust seasoning. Garnish with parsley or parmesan.
