Rustic Lentil & Sweet Potato StewĀ šŸ„”šŸ„•

Ingredients:

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 large sweet potato, peeled & cubed

  • 1 cup dried lentils, rinsed

  • 1 can (14.5 oz) diced tomatoes

  • 5 cups vegetable or chicken broth

  • 1 tsp smoked paprika

  • 1 tsp thyme

  • ½ tsp cumin

  • Salt & black pepper, to taste

  • Garnish: fresh parsley or a dollop of sour cream

Instructions:

  1. Heat oil in a large pot. Add onion, carrots, celery, and garlic. Cook 5–7 minutes until softened.

  2. Stir in sweet potatoes, lentils, tomatoes, broth, paprika, thyme, cumin, salt, and pepper.

  3. Bring to a boil, then reduce heat and simmer 35–40 minutes until lentils and sweet potatoes are tender.

  4. Taste and adjust seasoning.

  5. Serve hot, garnished with parsley or sour cream.
