Smoked Sausage, Kale & White Bean Soup 🄣

Ingredients:

  • 1 lb smoked sausage or kielbasa, sliced into rounds

  • 1 tbsp olive oil or butter

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, peeled & sliced

  • 2 celery stalks, diced

  • 4 cups chicken broth

  • 2 cans (15 oz each) white beans (cannellini or navy), rinsed & drained

  • 2 cups chopped kale (or spinach)

  • 1 tsp thyme

  • ½ tsp smoked paprika

  • ¼ tsp crushed red pepper flakes (optional)

  • Salt & black pepper, to taste

  • Garnish: shredded parmesan or chopped parsley

Instructions:

  1. Heat olive oil in a large pot. Add sausage slices and brown for 3–4 minutes, then remove and set aside.

  2. Add onion, carrots, celery, and garlic. Cook 5–7 minutes until softened.

  3. Stir in broth, beans, thyme, paprika, red pepper, salt, and pepper. Simmer 15–20 minutes.

  4. Add kale and sausage back to the pot. Simmer 10 more minutes until kale is tender.

  5. Taste and adjust seasoning. Serve hot, topped with parmesan or parsley.
