šŸ² Creamy Corn, Potato & Bacon Camp Chowder

A cozy end-of-week comfort bowl—rich but humble.

Serves:Ā 6–8Cook Time:Ā 35 minutes

Ingredients

  • 4 slices bacon, chopped

  • 1 small onion, diced

  • 3 medium potatoes, diced

  • 1½ cups corn (fresh, frozen, or canned)

  • 3 cups chicken broth

  • 1½ cups milk or half-and-half

  • ½ tsp black pepper

  • Salt to taste

Instructions

  1. Cook bacon until crisp; remove half for topping.

  2. Add onion and potatoes to bacon fat; sautƩ briefly.

  3. Pour in broth and simmer 20 minutes.

  4. Stir in corn and milk; warm gently.

  5. Top with bacon and serve.
