š² Creamy Corn, Potato & Bacon Camp Chowder
A cozy end-of-week comfort bowlārich but humble.
Serves:Ā 6ā8Cook Time:Ā 35 minutes
Ingredients
4 slices bacon, chopped
1 small onion, diced
3 medium potatoes, diced
1½ cups corn (fresh, frozen, or canned)
3 cups chicken broth
1½ cups milk or half-and-half
½ tsp black pepper
Salt to taste
Instructions
Cook bacon until crisp; remove half for topping.
Add onion and potatoes to bacon fat; sautƩ briefly.
Pour in broth and simmer 20 minutes.
Stir in corn and milk; warm gently.
Top with bacon and serve.
