🫘 Monday Chuckwagon Lentil, Sausage & Vegetable Camp Stew
A steady, nourishing start to the week — hearty, affordable, and deeply warming.
Serves: 6–8Cook Time: 45 minutes
Ingredients
1 lb smoked sausage, sliced
1½ cups dried lentils, rinsed
1 small onion, diced
2 carrots, sliced
2 celery stalks, chopped
4–5 cups chicken or beef broth
1 tsp thyme
½ tsp smoked paprika
½ tsp black pepper
Salt to taste
Instructions
Brown sausage in a Dutch oven; remove and set aside.
Add vegetables and sauté briefly.
Add lentils, broth, and seasonings.
Simmer 30–35 minutes until lentils are tender.
Return sausage to pot and warm through.
