🫘 Monday Chuckwagon Lentil, Sausage & Vegetable Camp Stew

A steady, nourishing start to the week — hearty, affordable, and deeply warming.

Serves: 6–8Cook Time: 45 minutes

Ingredients

  • 1 lb smoked sausage, sliced

  • 1½ cups dried lentils, rinsed

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 4–5 cups chicken or beef broth

  • 1 tsp thyme

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • Salt to taste

Instructions

  1. Brown sausage in a Dutch oven; remove and set aside.

  2. Add vegetables and sauté briefly.

  3. Add lentils, broth, and seasonings.

  4. Simmer 30–35 minutes until lentils are tender.

  5. Return sausage to pot and warm through.
