Rustic Cornbread Chili Bake 🌶🍞

Ingredients:

  • 1 lb ground beef or turkey

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 can (15 oz) black beans, rinsed & drained

  • 1 can (15 oz) kidney beans, rinsed & drained

  • 1 can (15 oz) corn, drained

  • 1 can (14.5 oz) diced tomatoes with green chilies

  • 1 cup beef broth

  • 2 tbsp chili powder

  • 1 tsp cumin

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

For the Cornbread Topping:

  • 1 cup cornmeal

  • 1 cup flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 cup milk

  • 1 egg

  • ¼ cup melted butter

  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet or Dutch oven, brown the beef with onion and garlic until cooked through. Drain excess fat.

  3. Stir in beans, corn, tomatoes, broth, chili powder, cumin, paprika, salt, and pepper. Simmer 10 minutes.

  4. Meanwhile, prepare cornbread topping by mixing cornmeal, flour, baking powder, salt, milk, egg, and melted butter until combined. Fold in shredded cheese.

  5. Pour chili mixture into a greased casserole dish. Spread cornbread batter evenly on top.

  6. Bake 25–30 minutes, until golden brown and set.

  7. Serve hot, topped with sour cream and chopped green onions.
