🫘 Smoky Bean & Sausage Camp Stew

Bold, hearty, and deeply warming—perfect for colder nights.

Serves: 6–8Cook Time: 40–45 minutes

Ingredients

  • 1 lb smoked sausage, sliced

  • 1 can (15 oz) pinto beans, drained & rinsed

  • 1 can (15 oz) great northern beans, drained & rinsed

  • 1 small onion, diced

  • 2 carrots, sliced

  • 4 cups chicken or beef broth

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • Salt to taste

Instructions

  1. Brown sausage in a Dutch oven; remove and set aside.

  2. Sauté onion and carrots in the same pot.

  3. Add beans, broth, seasonings, and sausage.

  4. Simmer 30–35 minutes. Serve hot with cornbread.
