š¤ Todayās Comfort Food: Cozy Chicken Pot Pie Soup
All the comfort of chicken pot pie⦠without the fuss.
Serves:Ā 6ā8Prep Time:Ā 15 minutesCook Time:Ā 40 minutes
Creamy, hearty, and familiar ā this is one of those recipes that feels like home the moment it starts simmering.
š Ingredients
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
3 medium potatoes, diced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded chicken
¼ cup flour
4 cups chicken broth
1 cup milk or half-and-half
1 cup frozen peas
1 tsp thyme
½ tsp black pepper
½ tsp salt (to taste)
For serving (optional but perfect):
Warm biscuits or crusty bread
Crushed crackers on top
š³ Instructions
Start the BaseIn a Dutch oven, melt butter over medium heat. Add onion, garlic, carrots, celery, and potatoes. Cook 5ā6 minutes until fragrant.
Make It Thick & CozySprinkle flour over the veggies and stir well. Cook 1 minute to remove raw flour taste.
Add Broth & ChickenSlowly pour in chicken broth, stirring constantly. Add shredded chicken, thyme, salt, and pepper.
SimmerBring to a gentle simmer and cook 20ā25 minutes, until potatoes are tender.
Finish CreamyStir in milk and peas. Simmer 5 more minutes (do not boil).
Serve WarmLadle into bowls and serve with biscuits for dipping.
