  • 2 tbsp butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 medium potatoes, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • ¼ cup flour

  • 4 cups chicken broth

  • 1 cup milk or half-and-half

  • 1 cup frozen peas

  • 1 tsp thyme

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

For serving (optional but perfect):

  • Warm biscuits or crusty bread

  • Crushed crackers on top

  1. Start the BaseIn a Dutch oven, melt butter over medium heat. Add onion, garlic, carrots, celery, and potatoes. Cook 5–6 minutes until fragrant.

  3. Add Broth & ChickenSlowly pour in chicken broth, stirring constantly. Add shredded chicken, thyme, salt, and pepper.

  5. Finish CreamyStir in milk and peas. Simmer 5 more minutes (do not boil).
