🤎 Today’s Comfort Recipe: Cozy Creamy Sausage & White Bean Soup
Hearty, gentle, and deeply satisfying—this one warms you from the inside out.
Serves: 6–8Prep Time: 10 minutesCook Time: 35–40 minutes
🫘 Ingredients
1 lb smoked sausage or kielbasa, sliced
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cans (15 oz each) cannellini or great northern beans, drained & rinsed
4 cups chicken broth
1 cup milk or half-and-half
1 tsp thyme
½ tsp smoked paprika
½ tsp black pepper
½ tsp salt (to taste)
Optional: handful of spinach or kale at the end
🍳 Instructions
Brown the SausageIn a Dutch oven, heat butter/oil and lightly brown the sausage. Remove and set aside.
Build the BaseIn the same pot, sauté onion, garlic, carrots, and celery until soft and fragrant.
Add Beans & BrothStir in beans, broth, thyme, paprika, salt, and pepper. Bring to a gentle simmer.
SimmerCook 20–25 minutes until vegetables are tender.
Make It CreamyReturn sausage to the pot. Stir in milk/half-and-half and warm through (don’t boil). Add greens if using.
ServeLadle into bowls and enjoy with crusty bread or warm biscuits.
