  • 2 tbsp butter or olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups cooked shredded chicken

  • 1 cup long-grain rice (uncooked)

  • 6 cups chicken broth

  • 1 tsp thyme

  • ½ tsp black pepper

  • ½ tsp salt (to taste)

  • Optional: a squeeze of lemon or a pinch of parsley at the end
