š¤ Todayās Comfort Recipe: Homestyle Chicken & Rice Soup
A gentle, nourishing classic that feels like care in a bowl.
Serves:Ā 6ā8Prep Time:Ā 10 minutesCook Time:Ā 40 minutes
This is the kind of soup you make when you want warmth without heaviness ā steady, soothing, and familiar.
š Ingredients
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
2 cups cooked shredded chicken
1 cup long-grain rice (uncooked)
6 cups chicken broth
1 tsp thyme
½ tsp black pepper
½ tsp salt (to taste)
Optional: a squeeze of lemon or a pinch of parsley at the end
š³ Instructions
Start the BaseIn a Dutch oven, heat butter over medium heat. Add onion, garlic, carrots, and celery. Cook until soft and fragrant, about 5 minutes.
Add Chicken & RiceStir in shredded chicken and uncooked rice.
Pour in Broth & SeasonAdd chicken broth, thyme, salt, and pepper. Stir well.
Simmer GentlyBring to a light boil, then reduce heat and simmer 25ā30 minutes, until rice is tender and soup thickens slightly.
Finish & ServeTaste and adjust seasoning. Add lemon or parsley if desired. Serve hot with crackers, biscuits, or crusty bread.

This soup gets thicker as it sits ā if you have leftovers, just add a splash of broth when reheating. Itās even better the next day.
